Ingredients

  • 1 tablespoon Parkay® Original Spread-tub
  • 1 cup chopped yellow onion
  • 1 cup hard cider
  • 1 lb (16 oz) Velveeta®, cut into 1/2-inch cubes
  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
  • Blue corn tortilla chips and apple slices, optional

Directions

  1. Melt Parkay in large skillet over medium heat; add onion and cook 5 to 7 minutes or until browned lightly, stirring occasionally. Add cider; simmer 3 to 5 minutes or until mixture is reduced slightly.
  2. Add Velveeta and drained tomatoes. Cook 3 to 5 minutes or until Velveeta melts, stirring occasionally.
  3. Serve with tortilla chips and apple slices, if desired.
