Cheesy Cauliflower Rice

Ingredients
- 1 pound ground beef
- 1 large shallot, finely chopped
- 2 small cloves garlic, minced
- 1 each red bell pepper, seeded and chopped
- 1/2 teaspoon kosher salt
- 1 bag (10 oz each) Birds Eye® Steamfresh® Veggie Made™ Original Riced Cauliflower
- 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
- 4 ounces Velveeta®, cut into cubes
- 1/4 cup fresh cilantro, chopped
Directions
- In a deep 12-inch skillet over medium-high heat, add beef, shallots, garlic, red bell pepper and salt. Cook, stirring occasionally, until beef is browned and no longer pink, about 7 to 10 minutes.
- Meanwhile, microwave riced cauliflower according to package directions.
- Add Ro*Tel® to skillet and cook, stirring continuously, until the liquid has mostly evaporated. Add Velveeta® and continue to cook until completely melted and incorporated. Remove from heat.
- Add riced cauliflower to skillet and stir until well blended. Portion into bowls, garnish cheesy cauliflower rice with chopped cilantro, and serve.
